Instructions
  1. Butterfly the sardine and remove the spine.
  2. Rinse under running water.
  3. Put the EVOO in a large frying pan, lightly fry the garlic, add breadcrumbs and cook until it becomes golden brown, add sultanas, pine nuts, tomato sauce, cook for a couple of minutes, tossing gently until combined. Turn off the flame and add the mint.
  4. Mix gently, season with salt and pepper.
  5. Make sure you have the right texture; squeezing a bit of mixture into your hands should get some extra oil out.
  6. Place the butterflied sardine on a lined oven tray. (see photo).

  7. Take about 30g of the mixture and place it in the middle of the sardine, then roll to enclose the filling. (Optional: add a bayleaf to the top of the roll and secure with a toothpick)
  8. Place it back on the baking tray and repeat until all the sardine are used.
  9. Bake at 180C for 20/25 minutes.
  10. Serve warm, decorate with pine nuts, sultanas, and some whole mint leaves.
