Rainbow Gnocchi with cherry tomatoes
Instructions
  1. Cut the cherry tomatoes in half, slice and chop the olives.
  2. Heat the oil in a pan, add cherry tomatoes, olives, and capers, let them soffriggere (fry lightly) for a couple of minutes.
  3. Glaze with a splash wine and cook for another 10 minutes over a low flame.
  4. Fill a large pan with water (at least 1l of water per 100g of gnocchi) and add salt.
  5. When the water boils, add the gnocchi and wait until they start to float to the top. Cook for another 1 minute. Resist the temptation to stir!
  6. Drain the gnocchi and add it to the sauce, which is still in the pan.
  7. Plate up, then garnish with a splash of olive oil and Parmigiano Reggiano (optional)
